Try Pamela's Products for gluten-free diets
After writing the Celiac disease column and blogs, I received a cornbread/muffin mix in the mail from Pamela's Products, which has an entire line of gluten-free baked goods. They sell cookies, bread mixes, muffin mixes and pancake mixes. While they aren't available in any of the chain grocery stores that we have in Cape May County, they are sold in Wegman's, Safeway, Winn Dixie, Publix and other stores. They also can be purchased from Amazon.com. I took the muffin mix home and baked them for people at work, without telling them they were gluten-free. Everyone generally liked them, but one person said she liked Jiffy brand corn muffins better. Jiffy can be purchased in just about any grocery store, but they can't be consumed by people with Celiac. Pamela's muffins had a good corn taste, but as one of our office workers said, it had a bit of a gritty texture. But everyone agreed after learning about the product, they're certainly good enough to eat if you otherwise have to go without, and a serviceable replacement for the real deal.
