Jay’s on Third, 9836 Third Ave., 368-1000, www.jaysonthird.com

It's in the old Fish Tales building. Billed as gourmet dining in a relaxed atmosphere, this BYOB has promise with local chef Jason Hippen at the helm. He has an impressive resume: graduate of the Academy of Culinary Arts; experience includes Sous Chef at Marie Nicole’s in Wildwood Crest, Opening Sous Chef at both Red Square at the Tropicana and Buddakan at the Pier at Caesars in Atlantic City, as well as in the kitchens with Josh Dechellis at Sumile in New York City, Morimoto in Philadelphia, Lacroix at Rittenhouse Square in Philadelphia, and Suilian by Susanna Foo at the Borgata. Most recently, Hippen was Executive Chef at JP Prime Steakhouse in North Wildwood.  With experience in several Asian restaurants and a culinary heritage from his Thai mother, "Hippen will bring his passion and dedication with an innovative menu with the focus being on new American cuisine with global influences that will be clean, delicate and fresh," according to his profile. The restaurant, which seats 60 to 70 people, in what is described as a minimalist interior where the attention will be on the inspiring menu.

Try the Grilled Local Scallops with Jersey corn risotto, shaved fennel, watercress and ginger flavors; New Zealand Rack of Lamb; Filet Mignon with Cashel Bleu Cheese; or Vegetable Pad Thai.
